Sparkle Peach Martinis

After a nice 3 mile run together this morning (okay, so he went farther than that), my husband and I enjoyed the rare lunch together downtown and planned out the rest of our day.  Somehow in the conversation, the idea of this drink came up.  So this afternoon, I rummaged around to see what I could come up with.  Wow - sometimes, the best ideas are those that are completely off the cuff!

As martinis go, this one is a bit lighter than most.  But that means that you can enjoy sipping on them without.. um... you know... getting tanked.  I enjoy lighter drinks.  That's okay.  You can laugh at me for being a lightweight if you want to.  There's something to be said for knowing what you like, and what you don't.  The peach mango juice goes really well with the coconut rum, making it seems pretty tropical; and the ginger-ale gives it just the right amount of "fizzy" to make it sparkle!

You probably can't tell from the photo, but it's mid-November here, and pretty chilly outside.  But having these sparkly drinks inside, with a fire, and a great football game are just the ticket to a great day.  I could definitely see these being a party favorite!

Ingredients:
(for 2 martinis)
  • 2 oz Parrot Bay coconut rum
  • 2 oz peach schnapps
  • 2 oz vanilla vodka
  • 4 oz FUZE peach mango juice
  • 6 oz ginger-ale
  • ice
  • garnishes, optional
    • honey
    • raw sugar granules
    • maraschino cherries
    • peach slices

Method:
Sorry, folks.  There are no step-by-step photos for this.  Fill your martini shaker at least half full with ice cubes.  Add all the ingredients, close it up, and shake for at least a minute so that everything get really, really cold.  Strain out into martini glasses.  To prepare the glasses, I rubbed a bit of honey on the rim, then dipped into raw sugar.  Add peach slices and cherries for a pretty garnish if desired.

Pizza Poppin Muffins

These are great for an afternoon snack, make a cool lunchbox choice, and are perfect for having kids over for sleepovers, movies, and game night. You get the idea right?... KID FRIENDLY!  Not only are they a great snack, but they carry a heavier nutritional punch than most "snack" foods!  You can load these babies up with the meat of your choice, and maybe even hide a few veggies!

Scared of the "make pizza dough" idea?  Don't sweat it - this recipe requires no kneading at all!  The whole kitchen will smell like a pizza parlor between the yeast, pepperoni, and oregano all baking together... but the texture is more like a muffin, with a tender moist crumb.  I'd be willing to bet that your kiddos would be thrilled to come in from school in the afternoons to these hot pizza muffins, fresh and steamy out of the oven, dipped into some warm pizza sauce.  But don't be surprised if the neighbor kids start migrating over, too!

Ingredients:
  • 2 3/4 cups all purpose (AP) flour
  • 1 envelope "quick rise" yeast
  • 2 Tbsp granulated sugar
  • 1 tsp table salt
  • 1 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1 1/4 cups very warm water
    • 120 - 130 degrees F
  • 1 Tbsp canola or vegetable oil
  • 3/4 cup mini pepperoni
    • could use chopped deli meats
  • 1/4 cup chopped cooked bacon
  • 1/4 cup finely chopped bell pepper
  • 1/4 cup finely chopped onion
  • 1 Tbsp butter
  • 1 cup shredded mozzarella cheese
    • could use small 1/2" cubes
  • a sprinkle of red pepper flakes (optional)
Step-by-Step:
Combine 1 1/2 cups AP flour, the packet of yeast, sugar, salt, oregano, and basil in a large mixer bowl.
1 1/2 cups AP flour
Tip - don't forget to check the expiration date on your yeast!
1 envelope "quick rise" yeast
Mom always told me... "the yeast needs something to eat!"
2 Tbsp granulated sugar
1 tsp table salt
1 1/2 tsp dried oregano
1/2 tsp dried basil

Add the water and oil.
Tip - I heated my water for a minute in the microwave.  Worked perfectly!
1 1/4 cups very warm water
1 Tbsp canola or vegetable oil

After the water and the oil, beat 2 minutes on medium speed.
Then gradually add in the remaining 1 1/4 cups flour to make the dough.  It will be really sticky and fairly stiff.
1 1/4 cups flour
While that's mixing, add the butter to the chopped vegetables in a microwave safe dish and cook on high for two minutes to "saute" the vegetables.
I knew my kids wouldn't want to eat the pizza muffins if the vegetables were raw and crunchy.. so microwaving them for a couple of minutes made them soft and sweeter!  If you want different veggies, or no veggies, go for it!  Make the recipe your own by all means!
1/4 cup finely chopped bell pepper
1/4 cup finely chopped onion
1 Tbsp butter

Now stir in (by hand) the pepperoni, bacon, sauteed vegetables, and cheese.
I bet these would be great with some chopped up deli meats like ham and turkey!
3/4 cup mini pepperoni
"Sauteed" vegetables
1/4 cup chopped cooked bacon
1 cup shredded mozzarella cheese
Add in the red pepper flakes if you desire.  Careful - these pack a lot of heat!
A very light sprinkle of red pepper flakes
Cover this bowl and allow the dough to rest for 10 minutes.

After it rests, portion the dough into 12 standard sized (2 1/2") muffin cups that you have generously greased with nonstick cooking spray.  I don't recommend you use paper liners, as we want the outer crust to get a little crispy.  Now cover the whole muffin tin and allow the dough to rise somewhere a little bit warm for about 45 minutes.  You can expect some amount of rise, but not double.
You could use the mini muffin sized tin as well.  But remember they will bake faster (17 - 20 minutes).
Bake these in a preheated 375 F oven for 20 to 25 minutes (I went 22 minutes for the ones in the photo) until they area golden brown color.  You should also be smelling them by now.
Let them cool a couple of minutes on a wire rack, then remove them from the pan by running a knife around the edges of each muffin.
Serve them warm with pizza sauce and maybe a sprinkling of fresh grated Parmesan cheese!

PS - I froze one just to see how they would reheat.  Thawed in the fridge.  Heated 20 seconds in the microwave.  FABULOUS!  Still moist and tender.. still smelled like an Italian pizzeria!

Turkey and Brie Panini with Cranberry Chutney

I know you are already starting to wonder what you are going to do with all those Thanksgiving leftovers, right?  Of course there are turkey sandwiches to be made.  - and then there are paninis!  I am completely a sucker for a toasted sandwich with melty cheese, and this one certainly does the trick!  I could definitely see this one on the marquee at a fancy deli sandwich shop!

Let's talk about the flavor elements of this panini for a minute.  You have all that leftover roasted turkey in the fridge.  A smear of mayo just doesn't seem to do it justice after all the work that went into it.  Then there is that homemade cranberry sauce - both sweet and tangy, that you've always had snuggled up to your turkey on the plate anyway.  It will be a great accompaniment to the turkey yet again!  As the cheese for our sandwich, I chose Brie - so smooth and creamy with a soft buttery taste.  The sweet/tart chunky cranberry sauce and the richness of the melted Brie are in sharp contrast to each other, which works beautifully here.  And then the peppery bite of the arugula provides us both flavor and texture balance as there is still a bit of crunch as you bite into the sandwich.

Can you taste it yet?!  A fine re-purposing of your left over ingredients!

Step-by-Step:
I'm sitting here laughing to myself because I'm not sure what to put here.  Here's the lowdown - cranberry chutney first and last, with everything piled in between!

These gorgeous multi-grain chiabatta sandwich rolls appeared in the grocery store that looked just perfect.  Hearty enough to hold up to all these great ingredients, with the perfect "rustic" feel to them with all the seeds and stuff.  So anyway, I spread them with a generous layer of the cranberry chutney...
Then add slices of roasted turkey and some gorgeous peppery arugula salad greens.  If you like a different type of salad, go for it!
Remove the rind from a wheel of brie and cut yourself a generous slice of it, topping the arugula.
Finally, another layer of the cranberry chutney over the brie.
Top this baby with that amazing bun and we are ready to do some business!
I have a panini maker.  Yep, I do.  I just couldn't find it for the life of me when I made these.  Sigh - too many cooking "things" here tucked into less than optimal storage spaces.  So I pulled out a grill pan.  If you don't have one, you should add one to your Christmas wish list.... I use the ones I have quite frequently!!  But if you don't have one, grab a regular skillet.  It won't have the grill lines in it, but it will still taste amazing.  You will also need something to "press" the sandwich with.  I allowed my cast iron press to heat up on another burner while the grill pan was preheating.  You could also use a small round heavy pan on top, or even a brick that you have cleaned and wrapped in aluminum foil.  You get the message - something heavy.

To my grill pan, I sprayed a thin layer of cooking spray.  Add the sandwich and your press while grilling.
Don't put it on too high of a heat because you want to give the ingredients time to warm up and melt the cheese while the bread is toasting.  Turn when the bottom is golden brown.  The press will obviously lose its heat after a bit, so when you flip and add it to the first side, it really just helps to press the bread.  So you don't have to worry about it over toasting the first side.
Now I can practically hear the "crunch" sound the bread will make as you cut into it!  Then when you open it, the melted cheese starts to ooze slightly, the thick slices of turkey are warm and juicy, and the interplay of flavors and textures is purely symphonic in your mouth!

Wanting to bring your leftover Thanksgiving bounty to work in your own grown-up brown bag lunch?  Well this sandwich is a very hearty lunch.  I was full after half!  Later when I heated up the second half in the microwave for a bit, the cheese got all oozy and melty, and it was delicious all over again!  Enjoy my friends!
