BLT Buffalo Chicken Wrap

This happened to be one of those days.... woke up before daylight with a headache, which persisted the entire day on and off.  I could just tell this was not going to be a cooking night!  Chicken tenders and mac-n-cheese for the kids.  Yes, really.  I know that every parent out there has those kinds of nights every once in a while!  But anyway, from the leftover chicken tenders, I made myself a really awesome Buffalo Chicken Wrap, so it wasn't entirely a bad evening.   

This is a fabulous way to use up extra chicken tenders from the kids, or whatever cooked leftover chicken you may happen to have.  Adding all the salad ingredients into the mix really gives this wrap a fresh crunchiness, and the garden spinach tortilla makes me feel like I'm incorporating even more veggies into this quick meal.  

Don't get me wrong - these made a very satisfying (and filling) dinner, but they would be just awesome to fix for your brown bag office lunches, picnics, tailgating, etc.!  Don't worry - even the guys will enjoy these.... after all, what guy doesn't love buffalo chicken?!

Ingredients: (per wrap)
  • about 3 oz cooked chicken
    • yes, I used leftover chicken tenders!
  • buffalo chicken sauce of your choice
    • I used Moore's.  It's not too incredibly hot.
    • about 2 Tbsp per serving
  • garden spinach wraps
    • sure - use whatever kind you want!
  • prepared buttermilk ranch dressing
  • bluecheese crumbles
    • I used the reduced fat kind
  • romaine lettuce blend
  • shredded cheddar cheese
    • I used a reduced fat Mexican blend
  • diced fresh tomatoes
  • diced avocado spritzed with lime juice
  • chopped cooked bacon

Step-by-Step:
Let me first say that making any type of "sandwich" (or wrap) is a very personal thing.  With four kids, I know all too well that each person has their own preferred balance of flavors and ingredients.  So I have intentionally left off "amounts" from the ingredient list.  A recipe is meant to be a guide, not a Bible... so definitely make this to your taste!

Cut your chicken into strips, and drizzle it with a couple of tablespoons of buffalo chicken sauce to coat. 
2 leftover chicken tender (waste not, want not!  LOL)
2 Tbsp buffalo chicken sauce


Now, just layer your ingredients onto your tortilla.
I begin with a nice smear of the ranch dressing so it will sort of hold all the ingredients to the wrap.

Layer on the lettuce, buffalo chicken, and all the rest of your ingredients.

The sauced chicken
reduced fat blue cheese crumbles
fresh diced tomatoes
diced avocados that I spritzed with a little lime juice so they wouldn't oxidize and turn brown
2 strips of crumbled cooked bacon
reduced fat Mexican blend shredded cheese

Wrap and roll, baby!!!!  - then slice and serve with a side of ranch for dipping.

These have so many great textures, big flavors, crunchy ingredients, smooth ingredients, my beloved cheese, tangy and creamy flavors... Woo Hoo!!!  And don't forget that these are mobile, which means that YOUR lunchbox will be the envy of the office.  :)

Method:

Quick Chicken Parmigiana Panini

This is a shortcut recipe to getting all those great flavors of Chicken Parmigiana without spending a long time making the original.  For this super quick lunchtime or light dinner treat, you can pick up a few convenience items at the grocery on the way home and have a gourmet, deli-worthy panini in only a few minutes!  And since you aren't staring down a breaded and fried dinner with a pile of pasta, you won't be too weighed down to get out and take that walk after dinner that you've been promising yourself.

I want to preemptively say (again) that this is a  shortcut recipe.  No, I'm not making the components from scratch.  It's for a fast and easy meal.  Of course you can use your delicious homemade sauces, chicken, etc. 

  • French bread
  • prepared marinara
  • freshly grated Parmigiano reggiano
  • cooked, grilled and sliced chicken breast strips
  • fresh basil leaves (or dried basil)
  • shredded, part-skim mozzarella
  • sliced provolone 
  • just a bit of mayonnaise 

Method:
It feels a little silly giving you a "method" to make a sandwich, but here goes... as some people like having explicit directions.    The short version:  Make the sandwich, grill and press it!  There.  :)    

The longer version:  Find yourself some lovely French or Italian bread. 
Apply some store-bought marinara to the inside of each piece that you will be using.  Choose the brand of your choice.  If you have some marinara that you have already made, use it. 
Starting with the "bottom" bread, add some freshly grated Parmigiana reggiano, your pieces of cooked chicken, some basil, shredded mozzarella, and provolone.

Basil - either fresh or dried.  You choose.

Sliced Provolone cheese.
Shredded mozzarella.
Top with the second "top" bread that also has marinara spread onto it.  
Add marinara to the top piece.  I like the chunkier marinara because I like having the pieces of tomatoes.  I'm sure you can find a smoother version if that's your preference.

Now to get this beautiful golden brown color, spread a little mayonnaise to the outside of each bread.  You can use butter or cooking spray, but the mayo really browns beautifully... and no - it won't taste like mayo.  
You can grill them on a grill pan, on a panini machine, on a George Foreman-type grill, on a black iron skillet, or just a plain old non-stick skillet.  I LOVE my grill pan, and use it all the time!
Flip when brown, and continue cooking until the other side is golden brown.  Pressing them gets all the ingredients "glued together."  If you are using just a skillet, consider putting a second heavy skillet on top of the sandwich to press it.      
Serve with a side of marinara.

    Grilled Cheeseburger Wraps

    I KNOW you've all been there!  A beautiful day out grilling burgers with the family.  Caught up in the lovely warm Springtime weather... it's days like that that make it worthwhile.  However, you ended up making way too many burgers.  You don't want to throw them away, so you put them in the fridge wondering what to do with them.  Am a right?!

    Well this is more of a "burger re-purposing" idea than a recipe.  I happened to come home for lunch one day, and saw the left-over grilled burgers in the fridge.  So I drug out the burger "fixings." As luck would have it, the buns were gone.  So..... I made myself a Grilled Cheeseburger Wrap.  Any preparation that ends up with gooey melted cheese will probably make me happy, but this was yummy!  So let's see - yummy end product, creative use of left overs, less than 10 minutes to make!

    Ingredients:
    Like I said, this is more of an idea than a recipe.  So for the ingredients, pull out whatever you want in the wrap.  

    But here are the ingredients I used.  I'm sure there are a bazillion different combinations that you can come up with!  I didn't add lettuce into the wrap because I thought it would just wilt.  I bet you could stuff some in there after you cut it if you wanted to.
    • grilled burger
    • grilled onions
    • grated cheese
      • mozzarella
      • cheddar
    • BBQ sauce
    • tomato slices
    • flour tortillas - white or whole wheat
    • butter flavored cooking spray
      
    Method:
    Chop the burger into small pieces.  Add all ingredients to the tortilla,  starting and ending with cheese.  Fold in the sides, then fold into a wrap.  Spray a grill pan or griddle with the cooking spray.  Add the wrap to the hot pan, seam side down to begin.  Spray the top side with the cooking spray as well.  This helps it to brown and helps the "shell" crisp up.  Press the wrap with something heavy while its "grilling" - maybe a smaller pan or even a brick covered with aluminum foil.  Turn when golden brown to grill the other side.  Don't forget the edges!  Enjoy!

    Cut the burger into small pieces.

    Start with cheese.  Putting the cheese next to the tortilla will allow it to melt faster.
    Shredded mozzarella
     Start adding your ingredients.  Whatever you want inside.

    grilled onions
    sliced tomatoes
    shredded cheddar cheese
    Fold in the edges, the roll up into a "wrap."  Wrap-n-roll!  LOL
    Add the wrap to a HOT grill pan that has been sprayed with butter flavored cooking spray.  Yes, you can use a "regular" pan.  Now spray the top.  This helps it brown and crisp up.

    Press the wrap as you are cooking it!  Use whatever you have on hand.




    Grill both sides and the edges.... and Voila!!  Here you have it!  LUNCH!

    Smoky grilled burger in a bit of sauce, gooey cheese, juicy tomatoes, a crispy shell... Now you can be out the door again in no time!
